Oak is used in the manufacture of many bourbons and whiskies.  The inside of the barrell is often burned to create a charred layer before the raw product is placed inside the barrel for aging.  The whiskey will be drawn through the layer of charcoal into the oak of the barrel during the aging process causing the whiskey to be given the dark coloring.  A "soak line" can be seen in the end grain to show the depth of movement into the oak.

A benefit of turning this product is the smell due to the soaking.  Smells like rum cake.
